Coastal Table and Tales is proud to present our very first coffee class — a guided journey through the art and craft of specialty coffee, led by Matty Shoults of newschool.coffee.

Matty has been immersed in coffee since 2018, starting part-time while in school before going full-time in 2020 at a specialty shop in upstate New York. After three years there, he and his fiancé hit the road, working at coffee shops across the country until they landed in Savannah in 2023 — the city they'd fallen in love with. Since then, Matty has led Origin Coffee's team and now runs the hands-on coffee program at Flora and Fauna, sourcing beans directly from farmers he knows and building drinks around local produce. His mission: to bring Savannah the best coffee experiences, at home and in cafés alike.

Coffee's story stretches back centuries, with legend tracing its discovery to a goat herder in the Ethiopian highlands who noticed his flock's energy after eating a certain berry. From there it traveled through Arabian trade routes, into European coffeehouses, and eventually into the specialty movement transforming how we drink it today. This class walks you through that arc in miniature: you'll taste four different coffee varieties, compare brewing methods side by side — including Aeropress and French press — and see firsthand how far a humble bean has come. For our final course, we'll "eat" our coffee: a homemade ice cream from Late Air paired into an affogato. It's a dessert you'll want to serve your own guests after a great meal — a caffeinated, sweet way to end our time together.
